Pancake Palooza

When I woke up this morning I had a plan. I was going to make chocolate chip pancakes for me, my sister Elaine, and my brother Zach. So I rushed to the kitchen and had my phone already opened to the recipe. It was my famous pancake recipe that I always used; and it never disappointed. But I guess theres a first time for everything.

At first it didn't seem like anything was wrong, and I set about buttering the pan and pouring the batter of the first pancake. The batter was very runny, and it didn't flip too well, so I decided to add more flour. I continued like that for a while until I was quite sure something was wrong. None of the pancakes flipped as swiftly as they normally do. This was usually the 'best' recipe. But I kept telling myself it'll all taste good at the end. And I was sorely mistaken. The pancakes had a very strange, sour taste and smell. Most of them were barely cooked on the inside, and filled with batter. So, I read through all the ingredients again thinking what could I have done wrong?! Maybe something expired or rotten?

-Flour

-Baking powder

-salt

-sugar...... HOLY GODS.

BAKING POWDER.................. And I was 110% sure I put baking soda. THREE AND A HALF teaspoons of it. So today, I'm going to be sharing this recipe with because despite my stupidity it usually tastes amazinggggggggggggggggg. And I've made it about five, six times in the past. so take my word for it.

INGREDIENTS

1 1/2 cups all purpose flour

3 1/2 tsps baking POWDER

1/4 tsp salt

1/4 cup sugar

1 1/4 cups milk

1 egg

3 tbsp butter, melted

INSTRUCTIONS

Melt the butter in microwave for 30 seconds, set aside.

In a medium bowl, mix together flour, sugar, salt, and baking powder.

Stir milk and egg together.

Create a well in the center of the flour mixture.

Pour the butter and milk mixture into the well.

Use a wire whisk to stir everything together until just combined.

It will be slightly thick and lumpy, but should be well incorporated.

Allow the batter to rest while heating a lightly oiled skillet or griddle to medium high heat.

Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake.

Cook each side for 3-6 minutes, until lightly golden brown. Makes about 11.
